Baked chicken recipe:
Preheat oven to 400
Get out large pyrex or use cookie sheet with parchment paper (not the perforated sheet, though)
Wash and slice potatoes; put potatoes in microwave safe bowl and cover with wet paper towel; microwave for 2 minutes
Wash, peel and chop carrots (pieces about same size or larger than potatoes)
Season veggies with oil, salt
Season chicken thighs (in fridge) with salt, pepper, garlic, oil, lemon juice
Arrange everything on pyrex or cookie sheet, chicken skin side up on top
Bake for at least 45 min, check temp at 30 min
