Marinate a pork loin or buy a marinated pork loin a day early

Preheat the oven to 400/425
Start to heat up a large frying pan

Veggie and Apple Prep:

Potatoes – microwave for a few min, then toss in olive oil
Baby Carrots – toss in olive oil
Add salt
Spread on parchment paper, put in oven with apples

Apples – variety is the spice of life (granny smith, honey crips, gala)
9X9 pan = 4 apples
Use the apple wedger or the apple-peeler-corer-slicer
Rub with cinnamon, brown sugar, honey
Cover in foil so it can steam

Now that those are in the oven, sear the sides of the pork loin in a high-heat oil (safflower)
Put in large glass pan with 1/4 inch of broth, any broth will do, just to keep it moist

Add the pork to the oven. Enjoy when the potatoes are golden brown and the pork is >145 degrees. Pork gets ~20-30 minutes in the oven.

Pull out the apples after ~30 minutes, or when soft.
